Do posts have to be marked as sponsored?

Yes. Paid partnerships must be disclosed in the way the platform and advertising rules require, and the brief will say so.

Can we reuse the content on our own pages?

Only if the agreement says so. Reuse, paid promotion of the content and the length of that permission are agreed in advance.

Can we pick the exact post wording?

You give a brief and approve the plan. Wording is usually shaped with the celebrity so that it suits their style, within the agreed message.
